The
Bushmans Sausage Legend

"If you've eaten
one of our sausages
you've become part of the legend"
The local constabulary
captured the notorious local bushranger, Dingo Donnelly at
the end of the 1900's. But they never could find the
recipe for his famous Bushmans Sausage. It was the sausage
which was widely believed to be the secret of the Dingo's
healthy survival in this rugged country.
And then at
last, quite recently, Dangerous Dan the
Butcherman (decendent of old Hoffamueller, one
of Donnelly's gang) made an astounding
discovery. He observed a loose brick in the
old homestead fireplace and upon investigation
discovered the famous recipe.
The legend
of Donnelly and his gang demands that the
recipe be kept a secret. But we can tell you
that it is a rich full flavoured sausage. It's
mixed with beefy chunks of topside steak and
blended with various herbs & spices from
the Congarrinni bush and beyond.
In his
recipe the Dingo recommends that the sausage
be char-grilled over the camp fire then washed
down with a barrel of Marmaduke England's
rough red plonk from the Valla vineyards.
However, our recent studies have shown that a
gas or electric grill and a bottle of fine
Hunter Valley merlot are acceptable
substitutes.
